Ingredients:
- 2 eggs
- ½ bell pepper, diced
- ¼ cup fresh spinach, chopped
- salt, to taste
- Pinch of pepper
Directions:
Mix all ingredients into a mug. Cover the mug with a paper towel so the egg doesn’t bubble over. Pop the mug into the microwave for 2-3 minutes. Mix halfway through the process. What a delicious snack!
